I made this last week with the last grapefruit in our fridge that had gone a little too hard. That's what happens when you buy an army-size bag of grapefruits. There tends to be one or two by the end of the month that turn into petrified rocks.
It took some serious arm strength to grate the zest off the dang thing-but it was worth it. and fun.
I couldn't decide if I liked it or not. Grapefruit Yogurt Cake?! As I polished off the remaining crumbs the other night and licked the plate clean and rummaged through my fridge looking for another petrified grapefruit, I decided that Yes, I do like this cake. Yes. Yes, I do.

Try it for yourself while grapefruits are still in season. This would be super-delicious in the morning with tea, or a handful of chocolate morsels if you're like my Mom, or a bowl of Life Cereal if you're like my Husband. You may (or may not!) be dissapointed.

Okay - this is what I was referring to on my blog. How is it possible to photograph that bread of yours and make it look like it is from the cover of Gourmet magazine? Could you PLEASE give me some lessons Erin?

The key to taking a good photograph is stealing it from the professional photographer who TOOK the photo ;)
