Ingredients

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon

Directions

Preheat oven to 400 degrees F. Grease muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Bake for 20 to 25 minutes

My mom sent me an email today saying she missed my blog. I've felt a little uninspired lately, and writing about how we slept in until 10 am and stayed in our pajamas all day - every day during christmas break isn't really blog worthy.

But today I got ready, and we went out in the snow. It snowed! Finally!

And now I am home alone. watching The Notebook and eating canned pears for dinner. Geeeez...that's a really rainy sex scene they just showed on TV...

Don't worry Mom, i'm alone because Adam went to get a hair cut—but actually he just walked in and told me he has spent the past hour and a half at Thrift Town. Really?

See? You haven't missed much.

My Birthday is the gateway to my favorite time of year.
I stole some of these photos from Patsy's blog. Patsy is my little brother's ladyfriend.
Just when I want to wallop the backside of his head, he does cute things like host fall parties with her and buy me nice birthday gifts.
Anyway, she's a keeper and my brother better not screw this up.

This weekend was very festive. Besides coordinating what to wear with Troy (see above), we also attended a Godfather-themed murder mystery party. I missed the memo on what to wear and showed up looking like a Real Housewife of New Jersey. It was kind of ideal.

Next on my list is pumpkin patch, haunted forest, and a scary movie make-out.

I'm sorry it's been so long. I had a little anxiety attack last week due to a little hiccup in my life, but all is well!
Except it's past midnight and i'm wide awake. I knew I wouldn't be able to fall sleep tonight after my hour long nap earlier today. I woke up at 5 pm in a panic thinking I was late to work.

Once I get my groove back, I will post everything we've been up to-including 4 birthday celebrations. Did I mention I am now in my late 20's??? bleh. Oh, and i'm married to a 30 year old. yikes. (and no...that's wasn't the cause of my anxiety attack ;)

I am wiped out. We spent the past 2 days in Midway for Swiss Days. It's a tradition whenever Karin is in town.

Karin is like my second Mother. Well...actually I have a lot of second mothers. But really-she IS my other mother. She was in the hospital the day I was born, she sat behind me as I signed my marriage license...and my children will probably call her grandma one day.

Anyway, she's hilarious and Swiss Days wouldn't be the same without her.

This weekend I felt like I was on an episode of The Bachelor.

Except we didn't have a private island and Adam and I didn't run to each other from a mile away and hug.

Needless to say, we did a lot.
and this is only half of it.

One of the highlights was the ice cream scotcheroo pictured above. Almost as great as being married to my sexy husband for 2 years .

Family flew in on Saturday and the fun-ness started all over again. But getting in a tiny plane with my grandma's 90-year old pilot boyfriend isn't exactly my idea of fun.

Adam enjoyed it so much that he puked. really.

i'm pooped. and full.

About 3 years ago I worked as an event host and helped coordinate several weddings each week.
I worked with a lady named Sara. pronounced Sarr-uh.
She was cosmic.
Always talking about different energies and how the universe was constantly shifting. She said the word "energy" about 400 times every night I worked with her:

"That Bride has such negative energy..."
"The energy of this event just makes me want to dance!"
etc., etc.,
She even brought tarot cards to work and revealed my good fortune during our lunch breaks.
yup. she was far out.

The day after I broke up with Adam, Sara knew it. She said that I was emitting negative vibes and that my aura was bad. As if!

While the bridal party was dancing the night away next door, she pulled me aside in the office and told me to sit across from her. knees touching.

"yes, holistic energy healer" I said.

She then proceeded to recite some mantra. I was too weirded out to focus. I thought someone might walk in and think I was being converted to Buddhism that very moment.

She asked me to repeat everything she said. It ended a little more normal, saying things like, "I am worth it", "I am beautiful" etc., etc.,

But my favorite part was when she reached into her purse and pulled out a small vial.

Love Spray #11.

An energetic spray that assists in changing and uplifting the mood of a person, animal or the environment. Aligns you closer to the vibrational frequency of pure love each time you spray.

She spritzed the hell out of me.

Obviously I ended up falling in love and marrying Adam. He thinks it was because of his persistence;

Weekend was fun. After a bike ride on Saturday we headed up to PC with the Petersons and walked up and down main street. I would have posted some cool pics of the art, but I think I would have gotten in twubble. My favorite was her. Adam's favorite was the nakey lady sculpture. (or so i think)

Thank you, mom, for sending me home Sunday night with the leftover pineapple upside down cake the size of Asia. It has since relocated to my arse.

I don't blog anymore because i'm too busy going to costo, home depot and eating at Rio Grande with my parents. At least that's what we did this weekend.

We also went to the pool, watched movies, and feng shui-ed our living room. We came to the conclusion that our long and narrow living room is impossible to decorate. It doesn't have feng and it doesn't have shui. i give.
oh, and i also watched daniel dance onstage with katy perry. don't believe me? enjoy.

Since my {fun} little incident last week, it's taken me a while to feel like myself again.
Just when I got out of my funk, I realized we are half way through summer.

July is flying by too fast.
Between husband's GMAT studying and being a golf-widow,

My days off have become routine...garden...food...nap...friends...
i'm hoping this Saturday we can hit up the farmers market.

Our roses are now dead, RIP, but I took this glorious photo right before they started to wilt. While trying to snap this photo I kept pricking myself on the damn thorns. Adam kept telling me that "every rose has it's thorn."
It was very ~~annoying.~~ funny.

After a full day of gardening on Saturday, Maureen came over for her birthday and brought with her a decadent chocolate cake. She wanted us to partake of this chocolatey goodness,
and partake we did.

And since one chocolate cake wasn't enough, I went ahead and baked another for Father's Day.

...aaaaannnnd, I am now 2 sizes bigger.

Saturday morning started bright and early with a trip to Home Depot to purchase everything we needed to landscape our front yard. Luckily we had Lei with us to show us the ropes. We left with 3 huge utility carts full of plants.
Our garage sale the week prior bought us 2 evergreen trees, 4 spindle tree bushes, 8 salvia plants, preen, and 4 bags of top soil.
I found a new hobby. I am already making plans to tear apart our back yard.

...I think we need to hold another garage sale.

Saturday started bright and early with our garage sale. It was a success! We met lots of new neighbors and lots of interesting people. Afterwards we went to lunch with my parents, mowed the lawn, set up the new BBQ (by myself), bought new tires for my cruiser, took a bikeride around sugarhouse park, and then gourged our faces with pizza.
we zonked. but I hope every saturday is just as busy.
next weekend --> tear apart front yard.

Monday I bought geraniums for our back yard and we christened the BBQ with shish kabobs and grilled pineapple. delicious if I say so myself.

Last night we took another bike ride and ended up talking to our very green neighbors. Their home is completely solar. They even xeriscaped their lawn to conserve water AND they have chickens! They gave us a dozen eggs. I almost cried.
While talking to our eco friendly tree hugging neighbors, I realized that every freaking light in our house was on, we had two gas guzzling cars parked in the driveway, and the sprinklers were producing a bellagio fountain show in our backyard.

we need to work on being a little more eco-friendly.

Adam got up at the crack of dawn this morning to golf with his pops, so I had a nice leisurely morning alone. Long shower, breakfast, yada yada yada.
Then, I almost died.
The culprit=hair straightener.
3 inches away from my face and >KaBoOm!<
A fireball the size of a bowling ball.
I may not have died, but i'm surprised the flames didn't burn my eyeballs out.
It wasn't until I got to work that I noticed the palm of my hand was BLACK.
...and now my mouth tastes like metal. (?)

mmm k.
kinda traumatic.
Naturally, I googled "hair straightener explosions" and found a forum of survivors who made me feel that I wasn't alone:

"my hair straightener tried to kill me!"
"OMG my straightener exploded!"
"A flame coming from the center of my hair straightener!"
" I got a big zap and my hair was scorched!"
"My new hair straightener isn't life-threatening"

Anybody staying up until 2 am to watch the Royal wedding? I think I want to! Even though we can DVR the whole thing-i think it would be more exciting to have a viewing party with tea and crumpets. Or maybe peanut butter and jelly.

I have a lot of catching up to do. I took almost 10 days off of work. 10 days! Pure Bliss. We spent time in St. George and Las Vegas with the Buies, and as usual, it went by way too fast. Why?! It was a blast. I had to regroup yesterday and prepare myself to come back into work. I brought this book with me on the trip...i'm only into the first 40 pages (I was obviously a little too busy and distracted to read), but it seems pretty good so far. I'll keep you posted!

I snapped these yesterday when I got home from work. I was so excited to see something other than SNOW in our front yard. For all I know these could just be very pretty weeds. Whatever they are, they made me happy.
We have been in spring cleaning mode this week. We cleared out our garage which was full of crap that had probably been there since the house was built in 1932. We found some gems, but mostly crap. And by 'gems' I mean a brand new set of blinds. This kind of stuff excites me.
Then yesterday we proceeded to clean our guest room, which was slowly starting to look like an episode of 'Hoarders: Buried Alive'.
Does anyone else have a junk room that's slightly emabarrassing/hazardous to your health?? humor me and tell me yes.
If it weren't for our house guest this weekend, I think we would have suffocated in piles of our own clothes and 2 year-old wedding gifts never put to use. I found 4 sets of measuring cups, new towels, the missing plate to our dinner set, and a crock pot! who knew hoarding could be so much fun?!

Here's to spring cleaning!

It seems my Friday posts have become my weekend to-do list. There is usually so much going on, but this weekend I can't say we have any exciting plans.

I'm hoping to convert our junk room into a study for Adam and attempt to get rid of the 1 lb block of chocolate in our pantry by making cookies. Pretty exciting, huh?

Adam is hopefully starting grad school next month (while keeping his full time job). I got a glimpse of what life will be like when he spent the other night awake until 2 in the morning working on admissions and fixing his resume. bleh. I sat in the living room twiddling my thumbs and patiently waiting for someone to entertain me. I need to make more friends. That, or get a puppy. ooh...a puppy!

I think my weekend plans just got a little more exciting!

Wowy. we did a lot this past weekend. Sunday morning was blissful. I got to sleep in WITH my Husband. Imagine that! waking up next to your spouse?! It was great. I made breakfast Sunday morning and we watched Conference all day in our PJs.

Last night after work we got into Spring-cleaning mode and fixed up our yard and dusted off the patio set. Hurrah! It made me so excited for summer. I'm also glad for these longer days, which means we can take the scooter out at 8:00 and still have plenty of light. My parents also stopped by and dropped off a loaf of heavy Irish soda bread. It was the perfect evening.

So perfect, I made Adam take a picture of me:Tomorrow night i'm hoping we can take the horses out.

cloudy drive home from Powell summer '10

Since none of my goals last weekend panned out exactly as I had planned, i'm shooting for some new realistic ones.
I guess asking your significant other to help with the dishes is a little far fetched. oh well.

Last night we watched our Young Women perform in the Sound of Music. It was quite the production. A little more put together than when I was cast in the Sound of Music in 8th grade as Fredricka. Yes, you heard me right. Only 4 boys tried out for the play that year, so that meant they had to turn the 3rd oldest Von Trapp child, Frederich into a girl. Fredricka --> me.
My mom was so proud. tear*

This weekend I hope to go to the Temple, plan my lesson, teach on Sunday, celebrate Amanda's Birthday...HAPPY BIRTHDAY!...wash my car, find a new book, buy a new swimsuit, figure out where all the dust bunnies in our house are reproducing, and teach my husband how to pick up the annoying english muffin crumbs and hardened strawberry jelly mess all over the counter.

4 years ago today I was sitting in a fabulous hotel room

in Kiev, Ukraine lining up my Matryoshka dolls one by one

and watching 'Fashion TV'.

(i'll explain in another post....) ANyWaY....

When what to my wondering eyes should appear but Igor, the hotel

concierge at our door holding a platter of chocolates with a rose and a

small typed note. FOR ME!

The note simply read, "Happy International Women's day!"

*blush*

All these years and I had never heard about International Woman's Day.

Casey and I immediatley sent some flowers to my Mom in the States.

Presidents Day was a good day. I usually don't have a day off with Adam besides Sundays-so it was especially fun to head up to Midway and have the day to do whatever we wanted. Monday morning Scott, Adam, and I woke up at the crack of dawn to hit the slopes. It was a tad bit nippy, but the snow was ideal. powdered sugar under my feet. The view from the Canyons Resort is so pretty. Right????

No lie, the rest of our day was spent lounging and lying in bed playing Words with Friends on our iphone. I could spend houuursss on that game. Anndd....we did.

I don't think there is anything better than getting back in a warm bed after skiing.
...maybe cadbury mini eggs. I can eat an entire bag of those. Anndd....we did.

I will post pictures of our weekend getaway soon. It was much too short but so much fun. Blue skies and perfect weather.
Friday my cousin Donald graduated from bootcamp-he is now a Marine! We were able to go to the base and welcome him back to real life (for now).
Afterwards we celebrated at the Town & Country Hotel. delish.

Saturday we hit up the shops at Solana Beach, played at Karin's, helped her cook for the following day's brunch and jest vegged out. (we might have stolen cactus' from her neighbors yard...) Annddd.... what would a trip to San Diego be without hitting up Tader Joe's?? we had a plan of attack in there and boy did we attack. I was throwing stuff in the cart like the world was coming to an end and the only thing that was going to save us was chocolate covered pomegranate seeds and other unnecessary items from Trader Joe's. oh boy.

Finally Sunday morning Karin hosted a beautiful brunch for some close friends and it was fabulous. Pecan crusted french toasties, veggie fritatta, berries galore, croissants, homemade jams and oatmeal, chocolates and much much more. She went all out and I was there to punish it all. I would've attached a photo but by the end of the brunch it looked like I was smuggling croissants and chocolate truffles underneath my shirt.
It was a fun weekend getaway and I am so dang tired.

I came home to a sweet valentine surprise. My husband knows me all-too-well:

Ruth's Diner, more treats, and 'The Bachelor'.....ahh....it's nice to be home.

We're off to San Diego in the morning! Poor husband can't come. boo. Oh well. we're going to do girly things anyway-and he will stay occupied with his new iphone. I wonder how long it will take before he even realizes i'm gone. ??

I get back Monday night which happens to be Valentines day. I'm hoping for a movie-like welcome home. how romantic!

I made this last week with the last grapefruit in our fridge that had gone a little too hard. That's what happens when you buy an army-size bag of grapefruits. There tends to be one or two by the end of the month that turn into petrified rocks.
It took some serious arm strength to grate the zest off the dang thing-but it was worth it. and fun.
I couldn't decide if I liked it or not. Grapefruit Yogurt Cake?! As I polished off the remaining crumbs the other night and licked the plate clean and rummaged through my fridge looking for another petrified grapefruit, I decided that Yes, I do like this cake. Yes. Yes, I do.

Try it for yourself while grapefruits are still in season. This would be super-delicious in the morning with tea, or a handful of chocolate morsels if you're like my Mom, or a bowl of Life Cereal if you're like my Husband. You may (or may not!) be dissapointed.

Some people blog every flippin' day. I try to blog frequently-but sometimes there just isn't anything to blog about. I mean-nothing! If I were to blog every day i would end up talking about what we had for dinner the night before or maybe something adam said in his sleep...or the weird texts I get late at night from unknown numbers that say things like: "HOLA COMO ESTAS". (but really--who are you?)
I remember one of my roomates in college said that if she found my journal and started reading it she would probably fall asleep. "SNORE!" is the exact word she used.
Wow, thank you banshee roommate. I wasn't too offended since she was somewhat of a wild child and lets just say the things that were written in our journals were probably very...different. I'm sure if I read her journal my virgin eyes would melt and i would feel pretty violated and stripped of my innocence.

let's stop there.

Anyway, back to my point--my blog seems a little dry and i'm sorry if you hate looking at my plants, or hearing me gush about my husband, or think it's a waste of time reading about all the reasons I love my Dad. It is therapeutic for me.
It is also therapeutic talking to my best friend who just happens to have a birthday this weekend. I think it would be a lot more interesting if I blogged about the conversations I have with that girl. Now THAT would be quality blogging.

Even my old roommate would enjoy that.

I think it is important each year to set a goal to learn something new or take up a new hobby. Since I will never on this good green earth get into shape, I figured I would set a goal that I know I would accomplish.
Enter Canning 101
This year I am going to learn how to make jam. Not just make jam, but can jam. the whole sterilization/sealing process kinda gives me a headache. I've always been intimidated, but there is something so satisfying, so rewarding about eating the jam you made from your own two hands.
(or so i imagine)
Last week a friend dropped off some homemade peach jam and I have been savoring every bite. I have become a jam addict. Adam will find me in the middle of the night passed out on the kitchen floor with jam on my face.
Drunk on jam.

har. har. har. i'm the funniest person i know.

I spent the morning looking at HER tutorial.
I'm not going to let it overwhelm me-i'm going to learn, and partake of this jelly goodness! All for one and one for all!!

Hope you all had a fantastic Christmas. I think it was the longest day of my life. Never ending. But I couldn't have asked for anything more. AND I got the greatest gift of all time. A Lemon tree. a Meyers Lemon tree. Truly a gift that keeps on giving. The best part is that it already has little lemon nuggets growing on it. the other best part is that my brother nurtured it day in and day out before giving it to me. ahhh....that is love.

Lets hope this harsh winter won't be too harsh on my new little lemon friend.

2010 was a good year. We did a lot, ate a lot, and traveled a lot. We went to the other side of the world, bought a home, and celebrated one year of wedded bliss together. We hosted parties and went to concerts. Made new friends and mowed our first lawn. We became an aunt and uncle and cooed over babies. We went to Powell, skied, road-tripped, and roasted marshmallows. we also spent a lot of time with family and ate a lot of desserts.

I am so grateful that I have been given this year. I am so blessed! I always get excited about a new year approaching. Lets hope this one will be as good as lasts.

Here's to a New Year, a new outlook, and Lemons!

That's what I would want if I was stuck on an island and only had one thing to eat: something yeasty that rises. I am my Mother's daughter after all.
That is why I am attempting to make this Braided Lemon Bread for Christmas morning slash brunch. We usually have Ebleskivers, but those skivers just don't tickle my fancy.
I've been eyeing this recipe for over a year now--the only thing that has held me back was the yeast part.

Is this more of a Spring/Easter recipe?? I can't tell. every time I look at this photo I think of Easter morning. ??

Maybe if I substitute the lemon curd with Chocolate? Or cinnamon-raisin brown sugar filling?? (Kathy, this is when I need your help)

I am an interior design school drop-out. I dropped out because I had wanderlust. I had itchy feet. I vanted to travel zee vorld. So I did. Then got a degree in international relations...to travel some more, of course.
The funny thing is that after I dropped out, I HATED design books. They reminded me of something I never finished. They reminded me that I was a QUITTER.
Well, that hatred towards design books is looong gone. That realization came to me last week when I found myself in an igloo of design books in the uptairs corner of Barnes & Noble. They became my crack cocaine. And I wouldn't mind adding these to the igloo:

I promise this blog isn't going to turn into a huge list of stuff I want.
Ok who am I kidding of course it is.
I was thinking of all the ways I can snatch one of these pajama sets from toast. Maybe if I don't fill my gas tank this week I can purchase the autumn leaf set. I will drive the scooter up the canyon every day to work. ...hmm...
or maybe we will skip the groceries this week and dive into our food storage. During these hard economic times I think it is perfectly rational and necessary to have a beautiful pajama set that costs 69 POUNDS....bleh. I don't even want to do the conversion.
...maybe its a blessing they aren't carrying my size.

I also promise I will post more wholesome "mom blog" things-like how our Thanksgiving went, what I am thankful for, and maybe a picture of the apple pie I made.

Sorry for the hiatus--i've had writer's block...er...blogger's block?
I'd like to say we've been extremely busy-but actually we've been hermit-ing in our house all week watching season 4 of Friday Night Lights. I may or may-not have cried when Tim Riggins went to prison for his brother. I think it made me cry because:
a) Adam looks like Billy Riggins.
b) I was in prison the night before.
Literally. I went to prison Wednesday night. No, no, no, it's not what you're thinking....and this post would be a lot more exciting if I was locked up in the pen, but actually we went for a Young Women's activity (strange?). a little.
I was not expecting to sit and talk to 4 inmates about their lives in the slammer, but it was incredibly interesting and touching listening to these women share their testimonies. yes, testimonies. It was amazing how these young, YOUNG girls still had self worth despite their horrific pasts and what they've faced over the past 10+ years in prison. What surprised me most was learning how they've gained a relationship with their Heavenly Father.

“the power of the Savior to heal and bring peace and joy to those who have suffered so much at the hands of others . . . and the power of the Savior to heal those who have caused suffering. . . . He heals all! Those who suffer and those who cause suffering - we all receive such mercy because of His suffering”

So last night we went to the Temple and I couldn't get this thought out of my mind. An institute teacher once told me that there is more equality in our trials than we think. I've always had a hard time believing this, especially after visiting these girls; but I know that depsite our trials and wrong-doings, we are all healed and made perfect through the Atonement. I left feeling very grateful for my life and the freedoms I enjoy.

So those are my thoughts this week. er....i feel like i should tell a joke or something.
On a lighter note,
We came home after the Temple and watched more Friday Night Lights.

Our home is all decked out. I think this has become my favorite holiday. Leianne would be proud, and my Mom would say, "Erin Lee....!"
She calls me Erin Lee when she's impressed with something I did or if i'm dressed cute or made her a gift.

Went and saw Thriller at the Egyptian Theater last weekend with Maureen, Mikki & the kids. I loved it in a smaller theater. I could feel the zombie sweat from the stage. Maureen may or may not have peed her pants during a scary part. That just doesn't happen at Kingsbury Hall. sorry.
This made me want to be a dancer.

How sad is it that Dani is the same height as me? I used to change that girls diaper. sheesh. I'm getting old.
